Join us for a visit to Bridge Gardens in Bridgehampton to celebrate National Public Gardens Day.  Also in May meet us at Quogue Wildlife Rescue for a trail walk and exploration in the Nature Center.  In June put on your boots and join us for a wagon ride tour of Suffolk County Farm in Yaphank.  After the ride we will feed the animals and play in the Outdoor Nature Explore Classroom.

Meet a variety of turtles and tortoises during QWR’s Annual World Turtle Day Celebration.  Participants will learn all about these fascinating animals before taking a hike on the Refuge trails to search for native pond turtles and the Eastern Box Turtle, which is now a Species of Special Concern.  Sign up for one of the two time slots.  Dress for the weather.

Crunchy Raisin French Toast


Stuffed with Strawberries and Cream Cheese

Crunchy french toast fresh strawberries and cream cheese, make a great treat for any mom on Mother's Day!

Ingredients:
4 eggs
1/4 cup milk
1 teaspoon vanilla extract
8 slices cinnamon raisin bread
2 cups crushed cereal flakes (corn, bran, etc) - We used Kashi 7 Whole Grain Flakes
1 cup low- fat whipped cream cheese
1 cup diced fresh strawberries
2 tsp powdered sugar
Oil

Directions:
Crack eggs into medium size shallow bowl, beat lightly with a fork. Add milk and vanilla and stir well.

Chicken Pesto Pasta Salad

INGREDIENTS

  • 2 boneless skinless chicken breasts
  • 1 box elbow or spiral macaroni
  • Grape Tomatoes
  • Black Olives
  • Red Onion
  • Garlic
  • Olive Oil
  • Pesto Sauce Packet (I use Knorr’s)

 

DIRECTIONS:

  1. Make pasta according to instructions. Drain pasta and cool with cold water.
  2. Add 2 tablespoons olive oil and ½ tablespoon garlic to frying pan and cook chicken to temp and no longer pink in the center. I actually cut my chicken into small cubes before cooking. Let chicken cool.
  3. Add ½ cup olive oil and package of Pesto sauce in a large bowl ...
